Baked Salmon with Orange, Bay Salt and Honey


Ingredients


  • 1 kg side of salmon, skin on, pin boned
  • 2 oranges, thinly sliced, 1 tbsp orange zest reserved (car acara, navel or blood oranges)
  • 4 tbsp olive oil
  • Salt and pepper
  • 1 fresh bay leaf
  • 1 tbsp salt
  • 2 tbsp manuka honey

Method

1. Preheat oven to 200C. Line a baking tray with baking paper.

2. To make the bay salt, place bay leaf, salt and orange zest in a spice grinder. Grind and set aside. 

3. Squeeze over the juice of one lemon and drizzle over olive oil. 

4. Place the salmon, skin side down, on the prepared tray. Generously season salmon with bay salt then lay the slices of orange over the salmon (leftover salt can be kept in a container for a week). 

5. Cook for another 8/10 minutes or until cooked through but slightly pink in the centre. 

6. Remove from the oven and rest for 10 minutes. Drizzle with extra oil and serve warm or at room temperature.
