Every table needs a sweet ending, and for us, it’s hard to go past a chocolate mousse. This timeless dessert strikes the perfect balance between decadent and effortless, making it a favourite for dinner parties, celebrations, or those nights when you want something a little special. Our Favourite Chocolate Mousse
Ingredients
- 200g 70% dark chocolate
- 6 eggs
- 100g caster sugar
- 200ml whipping cream
Method
1. Melt the chocolate gently over a double boiler, making sure no steam touches it, then set aside to cool slightly.
2. Separate the eggs. In a small heatproof bowl, whisk the yolks with 1 tablespoon of water and half of the sugar. Place over the double boiler and whisk continuously until thick, pale, and creamy, then remove from the heat.
3. In a clean bowl, whisk the egg whites with the remaining sugar until soft peaks form. In another bowl, whip the cream until it just holds its shape.
4. Stir the warm yolk mixture into the melted chocolate until smooth. Gently fold in one-third of the cream and one-third of the egg whites to lighten the mixture, then fold in the remaining cream and egg whites in two more additions, working gently to keep the mousse airy.
5. Spoon or pipe into individual glasses or ramekins and chill for at least 2 hours until set. Serve as is or with whipped cream, chocolate shavings, or fresh berries.
