Bonnie’s Spiced Plum Jam
Ingredients
- 2 kg plums - Queen Garnet plums, or Blood plums are great too.
- 1.5 kg jam sugar (or substitute with caster sugar and add ⅓ of a cup lemon juice when adding the vanilla)
- 4 cups of water
- 3 tsp vanilla paste
- 1 cinnamon stick
Method
1. Wash and cut plums into quarters, remove stones.
2. Combine plums, cinnamon and water in large saucepan; bring to a boil.
3. Reduce heat; simmer for 30 minutes.
4. Add sugar and vanilla, stir over heat, without boiling, until sugar dissolves.
5. Boil, uncovered, stirring occasionally, for about 20 minutes or until jam jells when tested.
6. Remove cinnamon stick.
7. Pour hot jam into hot sterilised jars; seal while hot.
