Radicchio, Green Leaf and Maple Spiced Walnut Salad
Ingredients
- 1 cup walnuts, roughly chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp maple syrup
- Pinch cayenne
- Pinch cinnamon
- ¼ cup sherry vinegar
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 1 head radicchio, leave separated
- 1 head green leaf lettuce, leaves separated
- ¼ cup chives, finely chopped
Method
1. To make the spiced walnuts, preheat oven to 200C. Mix the walnuts, half the olive oil, maple syrup, cayenne and cinnamon in a small bowl. Scatter nuts onto an oven tray in an even layer and place into the oven to toast for 7 minutes or until turning golden. Set aside to cool completely.
2. To make the dressing, whisk, vinegar, remaining oil, mustard and honey in a large bowl to combine.
3. Add radicchio, lettuce, chives and half the walnuts to a serving bowl and season with salt and pepper. Drizzle over dressing and top salad with remaining walnuts. Serve immediately.
